Glenfiddich Comes Of Age

When the spirit has matured to perfection, the casks are emptied and the whisky is ‘cut’ with pure Robbie Dhu spring water. This reduces the alcohol by volume once more to around 40% ABV.

Nearly all of the Glenfiddich single malt Scotch whisky range is then bottled on site at The Glenfiddich Distillery, other than 12 Year Old . Glenfiddich is the only Highland single malt distilled, matured and even bottled at its own distillery, using a single source of spring water throughout the process.

Glenfiddichs 15 Year Old is mellowed by the Solera method, meaning that some of the whisky in the mix is even older than 15 years. The International Spirits Challenge awarded it Double Gold in 2020, while the International Wine and Spirit Competition gave it Gold Outstanding.

Glenfiddich ages this Speyside single malt for 15 years in new oak casks and Oloroso sherry casks before mellowing it in a large oak tun . This tun has continuously been kept half full of whisky since 1998.

On The Nose

Caramel and honeyed vanilla, dark fruits, and spice notes.

On The Palate

Initially smooth, with sherry-coated fruit, honey, and marzipan, leading to a reasonably short, oak finish with a touch of sweetness.

Glenfiddich uses batches of no more than 150 casks for ageing Glenfiddich 18 Year Old. The IWSC awarded this whisky Gold in 2015, praising it highly. The companys control over its cooperage allows it to maintain quality with this classic sherried malt.

Glenfiddich matures this Speyside single malt in small batches for 18 years in American bourbon and sherry oak casks.

On The Nose

One is greeted by floral heather honey notes, oak, and vanilla, with the underlying aroma of baked apple.

On The Palate

Dried fruits such as dates and apricot mingle with cinnamon and orange. Mid-palate reveals dark chocolate and apple, leading to a long oak finish.

General Flavors Of Single Malt Scotch

Single Malt can only be labeled as scotch if the following criteria are met:

  • Distilled at a single distillery
  • Distilled in a pot still
  • Contains only water and barley
  • Has been aged for a minimum of 3 years
  • Has been aged in an oak cask
  • Distillation and fermentation occur at the same location
  • This must all occur in a permitted Scottish warehouse
  • Single Malt Scotch must be bottled in Scotland
  • If there is an age marked on the bottle, there should also be a bottling year included. This helps guarantee quality for the customer.

    Specialty Tuns To Marry Blends

    After maturation, the Malt Master tastes and selects only certain barrels. These special barrels are filtered into Portuguese oak marrying tuns to blend together for a few years. This seamlessly marries the blends and smooths out the idiosyncrasies of each different barrel. This creates a smoother, more uniform end product!

    Since Glenfiddich 14 is a quality scotch whiskey, it deserves to be savored. There are a few different ways to do that, but our favorite is enjoying this drink the classic way. All youll need is your favorite whiskey glass and a drop of water.

    Simply pour a few inches of Glenfiddich 14 in your whiskey glass to get the optimal ratio of whiskey-glass-air.

    Swirl the whiskey in the cup and smell it before taking your first sip. After the first sip, add a single drop of the water to the Glenfiddich 14 and swirl it again.

    Adding water releases even more flavors and aromas that were hidden without it. Although I recommend drinking the whiskey only a couple of inches at a time, refilling your glass is encouraged if youre trying to enjoy the effects, too.

    Best Under $: The Glenlivet 12 Year Old

    The Glenlivets 12-year-old expression is extremely popular, and for good reason. Its priced affordably and has a really approachable palate, according to Chris Dempsey, bartender at Xaman in Dallas. Its not too peaty, and its really the best everyday drinking whisky for a great price, he says.

    The whisky was matured in a combination of American and European oak and is a good entry-level bottle for those who dont want to spend too much but are looking for something with complexity of flavor.

    Region: Highlands | ABV: 40% | Tasting Notes: Vanilla, Almond, Baking Spice

    This is a classic Highlands whisky and is an interesting look at one of the whiskies that makes up the much better-known Dewars White Label.

    A major malt component of the Dewars blend comes from Aberfeldy, a distillery that has been around since the beginning of the 20th century. The 12-year-old expression is a great value single malt, usually available for somewhere between $30 and $40. For that relatively low price, the discerning drinker is rewarded with flavor-rich, syrupy notes of honey punctuated by bursts of vanilla and paired with a gentle spice undercurrent.

    If you like peated whisky, this is one of the best out there for sure, says Kurpinsky. Ardbeg is something of an Islay cult favorite, particularly appealing to true lovers of smoky whisky.     McCoy is a big fan of Lagavulin, an Islay distillery that produces some nicely peated scotch. The 16-year-old expression, aged in second-fill ex-bourbon barrels, might be a little pricey, but its well worth the splurge. one of my all-time favorites from Islay, says McCoy. Big peat smoke, spice, sherry and notes of soft wood and black teadelicious all by itself while you’re unwinding next to the fire.

    Best Port Cask Finish: The Dalmore Port Wood Reserve

    Region: Highlands | ABV: 46.5% | Tasting Notes: Berry, Mocha, Ginger

    Many scotch distilleries finish their whiskies in port pipeshuge wooden vessels that previously held port, and named for the Portuguese word “pipa,” or caskwhich provides a different way to enhance the flavor of a whisky. The Dalmores already intensely fruity and complex single malt offers striking notes of ripe plum, cherry and dried apricot in the Port Wood Reserve expression. This non-age statement whisky is initially aged in bourbon barrels before being finished in Tawny Port pipes from W & J Graham’s winery in Portugalexemplifying why port wood is a preferred cask finish.

    Glenmorangie offers a wide selection of whiskies, from the 10-year-old core expression to some incredibly expensive vintages. Although the Signet single malt does not bear an age statement, it does not need one .

    According to the distillery, roasted chocolate barley malt is used in the mash bill, and the spirit is aged in designer casks. I love coffee and chocolate notes in both spirits and cocktails so this one sings to me, says Meaghan Dorman, bar director at Dear Irving on Hudson. Velvety and sophisticatedthis is a unique spirit, worth the investment.

    Inside The Mash House

    Two of Glenfiddich single malt Scotch whiskys essential ingredients – malted barley and soft clear water – are brought together in the mash house. The malted barley is ground into ‘grist’ – a coarse flour that is mixed with heated pure Robbie Dhu spring water from the nearby Conval Hills and then poured into giant ‘mash tuns’. Here a slowly rotating set of mash knives lift and sift the mash to ensure good sugar drainage. In the mash tuns, the natural bubbling chemistry and clouds of steam rise, filling the air with a pleasantly pungent aroma. The hot water completes the conversion of starch to sugar, which dissolves into the water, producing a sweet liquid called ‘wort’, some six hours later. The wort is drained, cooled and made ready for fermentation. The ‘draff’ – the left over barley from the process – is sold to farmers and fed to their cattle.

    Thats no small feat, especially seeing how all the water used in the Speyside distillerys production comes from just one source: the Robbie Dhu Spring. This is just one of a number of factors that make Glenfiddich unique. Here are 11 other things you should know.

    Fermentation In The Washbacks

    Yeast is added to the wort as it is pumped from the cooler into the traditional wooden fermentation vessels, the ‘washbacks’. Our handmade washbacks are made of Douglas fir rather than the stainless steel that many other distilleries use. This traditional method of production is kept so as to not alter the flavour of the whisky. These washbacks are a towering 17 feet high , and are filled to within 3 feet from the top. As fermentation raises the temperature from around 19°C to about 33°C, the resulting carbon dioxide gas creates a massive, hot frothing head to the wort that foams up the remaining 3 feet to the top of the washback and has to be kept down with mechanical beaters.

    After around 64 hours of fermentation, the furious bubbling subsides, leaving a brown liquid of 8-9% ABV, similar to a strong beer – the ‘wash’.

    Glenfiddich Released 11 Extremely Important Bottles In 2011

    The ultra-rare Janet Sheed Roberts Reserve was released to honor Roberts 110th birthday. The last remaining grandchild of William Grant, she was also Scotlands oldest woman. Each of the 11 bottles sold at auction and all proceeds went to charity. One of the whiskies sold in New York in March 2012 for $94,000, breaking the world record. Roberts sadly passed away the following month.

    The new spirit is reduced to around 63% alcohol with natural spring water from our Robbie Dhu springs and then filled into hand-built oak casks, prepared and maintained at the Distillery’s own cooperage. All casks filled at The Glenfiddich Distillery are first checked by one of our qualified coopers, a practice unique to the making of Glenfiddich whiskies.

    The coopers, who apprentice for approximately five years , work with incredible speed and agility to assemble, repair or reconstruct around 25 casks each every day. We use only the very best casks made from the very best wood, such as sherry butts from Spain and bourbon barrels from America that have had only one filling of sherry or bourbon whisky.

    We know that the quality of our barrels is vital, as this is where the magic happens. Even when pressure-testing our sherry barrels, we use sherry instead of water so that their integrity is not compromised.
