Casa Dragones prides itself in its artisanal approach where it only produces tequila in small 500-case batches. Its Añejo barrel blend is produced by blending tequila that has been aged separately in new 100% Quercus Sessile French oak and new American oak.
Both barrels have been lightly bousiné or toasted, which helps in offering greater complexity by reducing the woods influence. The result is a floral and fruity nose with rich macadamia and spicy nutmeg flavour that finishes on a crescendo of cacao and pepper.
Aejo Alarm: Why Aged Tequilas Are Disappearing
Fans of the aged tequilas, take note. You could be facing a shortage of your favorite sippers, higher prices, or both, as several sources report that they have no more añejo tequila to sell into the marketplace.
Producers have been reluctant to lay down spirit with these high prices , thinking the price would drop, but it hasnt and reserves are drying up, says Jake Lustig, owner of the ArteNOM Selección tequila brand.
The price of the raw material to make tequila has spiked in recent years, reaching a high of 32 pesos a kilo, compared to just under 4 pesos per kilo in 2016.
Agave prices have always gone through a cycle of boom and bust pricing, since growers often abandon the crop when they are getting almost nothing for it, only to replant when they see the prices climb. But the latest price spike has been unusually prolonged. We have recorded prices above 25 pesos a kilo since 2017.
Just to give you an idea of the capital required to make tequila, at 30 pesos a kilo one large oven load alone costs around $40,000 USD
This means that tequila producers have faced a dilemma for some time. Should they wait one year or more as their product rests in barrels before they get a return on their investment, or simply focus on making blanco tequila, or a lightly aged reposado, instead?

Eduardo Lalo González, the grandson of Don Julio González of the iconic Don Julio tequila brand, … has launched his own brand, LALO.
What began as a small, private batch tequila made for friends and family in Guadalajara has grown into a recognized, sought after brand in Mexico and the U.S.
LALO tequila, named after co-founder and maestro tequilero Eduardo Lalo González, the grandson of Don Julio González of the iconic Don Julio tequila brand, launched last year in the U.S. after several years of development and a tremendous reception at home in Guadalajara. Since its launch, the brand has seen a fast, increasing growth in just a few months.
González and LALO co-founder David R. Carballido have been friends since their early teens, and had worked separately in the tequila industry for more than a decade. They reconnected when the latter was working on a new tequila for Don Julio, and reached out to González to learn more about his family.
Upon sharing stories of his grandfather and the tequila-making process, they realized they shared similar ideas about how tequila should be made and decided to create their own brand.

How To Drink Don Julio
The only way to drink Don Julio is to savour it slowly. It might seem like muscle memory to drink tequila in shot form but for the super premium bottles, its worth experiencing the aroma and flavour notes of the bottle. Don Julio is best served neat or, at most, with a few drops of water to bring out its unique properties. Treat it the same way youd treat fine whisky or rum and take the entire process step by step.
Start by pouring the spirit into a tasting glass to let the aromas breathe. Then, nose it gently with small sips to let the individual flavours dance on your tongue.
You dont have to rule out shot glasses completely when it comes to drinking Don Julio. In Mexico, some say the traditional way to drink tequila is in a caballito a taller, slender shot glass thats served with a lime and salt. The main thing is to not rush the process, and to enjoy the spirit sip by sip to appreciate its quality.

The Brand Uses A Very Specific Process To Grow Its Agave
Have you ever had a shot of tequila that feels like the gates of the fiery underworld have opened up to unleash themselves on your throat? Well, that is what practically all tequila tasted like before Don Julio Gonzalez came along. The issue? People were far more concerned about getting a nice buzz going than they were about the actual quality of their tequila. That all changed because of Gonzalez and his unprecedented approach to the agricultural process.
Gonzalez studied the varying climates of his region and settled on the mineral-rich soils in an area of Jalisco known as the Highlands . He determined that wider spacing of the agave plants necessary for the process would be a key factor in allowing his crop to grow to its full potential, including developing a rich flavor profile. He also shocked others by allowing his plants to age for almost 10 years, a technique that was all but completely unheard of at the time.
While all of this meant that production time from planting to finished tequila was much slower, the end result was evidently worth it. Each plant is still harvested by hand. To this day, they are awarded for their commitment to sustainability, including being recognized at the first agave plantation to receive a perfect score as awarded by the Farm Sustainability Assessment .
The Tequila Distillery He Opened As A Young Man Is Still In Use Today
The facility, eventually named La Primavera, began operations in Atotonilco not long after González secured his loan. He soon rolled out his first brand, Tres Magueyes, and, within a decade, was well on his way to the success that would yield the Don Julio Tequila collection of Blanco, Reposado, Añejo, 70, 1942, and the ultra-premium REAL. All six variants are still produced at La Primavera.

His Legacy Of Innovation Lives On
Enrique De Colsa, the current Master Distiller at La Primavera, was a protege of Don Julio González, training with the founder for five years before taking the reins in 2004. To commemorate the 70th anniversary of the brand in 2012, De Colsa borrowed a page from Don Julios innovation playbook, creating Don Julio 70, the worlds first clear añejo. Like his predecessor, De Colsa set the industry standard with this move, as similar products hit the market soon after Don Julio 70s introduction. Following the founders death, at age 87, De Colsa told Haute Living that González was more than a tequila producer he was a tequila lover and he worked hard to achieve perfection. It All Started With Don Julio Gonzalez
The life of Don Julio Gonzalez is filled with as many twists and turns as a night out while drinking tequila. Born in 1925, Gonzalez started in the tequila biz the year he entered double digits when he was hired to work at his uncles tequila distillery in Jalisco, Mexico, according to Thrillist. Ambitious to say the least, he grabbed hold of this opportunity and began soaking in all the knowledge about the production of tequila that he possibly could.
Tragedy struck when he was 15 and faced with the daunting challenge of becoming his familys sole breadwinner when his father died. With a mother and seven siblings to look after, he struggled to make ends meet, earning a pittance of only 9 pesos a week as a farmhand. In order to up his earnings, the teenage Gonzalez then took a grueling job distributing tequila all across Mexico on horseback, according to the Master of Malt. Armed with two 25-liter barrels of the good stuff, he was then making nearly 10 pesos a day, far outstripping his previous earnings.

How Don Julios Ultima Reserva Is A Tribute To Its Legendary Founder

Don Julio is one of Mexicos most iconic Tequila producers. Since its founding by Don Julio González in 1942, the company has earned a reputation both for the quality of its Tequila and for its record of innovation. It was among the first producers to release an Añejo Tequila and was the first to release a clear Añejo Tequila, ushering in the new category of Cristalino Tequila.
Recently, the company released its latest Tequila expression: Ultima Reserva. The Tequila is crafted from the last crop of agave planted by Don Julio and his family and was finished in Madeira casks using a Solera-like maturation process. There’s A Story Behind The Shape Of The Bottle
Never one to do things quietly, Master of Malt reports that Gonzalez also revolutionized the branding and packaging of tequila with his increasingly popular liquor. According to VinePair, tequila was previously sold in a standard tall glass bottle that was easy to hide away beneath a table, given that it blocked the view of one’s fellow drinkers. Since so much of the brand’s success could be accredited to the many guests as his dinner parties that sipped on his early creations, Gonzalez came up with an idea inspired by those soirees.
So, Don Julio designed a special bottle for his reserve Reposada that could be prominently displayed on the dinner table without blocking the view of other guests across the table. The now-signature square and short bottles are synonymous with the brand and, arguably, with the reputation of tequila itself.
How To Drink Don Julio 1942 Tequila
A premium tequila like Don Julio 1942 should be drunk neat . with the flavor of the tequila, you should not need lime or salt to drink it. Technically, you could also drink 1942 tequila as a shot, however, for the quality and price, you may consider that to be a waste.
Añejo tequila can also be used as the base for a cocktail as the flavor of the drink could bring out the flavor of the additional ingredients more. An Añejo Manhattan is a classic option for a cocktail. To make this drink, fill 2/3 of a glass with ice.
Combine 2 ounces of 1942 tequila, ½ ounce of sweet vermouth, ¼ ounce of sweet vermouth, a dash of Angostura bitters, and a dash of orange bitters.
Stir in the glass of ice for roughly 30 seconds to chill. Finally, strain the cocktail into a martini glass and garnish with a cherry.

They Also Created The World’s First Clear Aejo
In 2020, they shattered the industry’s preconceived notions of the agave spirit by producing the world’s first clear añejo tequila . During the production process, the Tequila Don Julio 70 Añejo Claro is thoroughly filtered to become a clear spirit while still maintaining that rich flavor many imbibers associate with a traditional Añejo.
Created to celebrate the 70th anniversary of Don Julio’s tequila-making venture, the clear Añejo is the brainchild of Master Distiller Enrique de Colsa. It’s created using blue agave harvested by hand at the peak of maturity. The liquor is then distilled twice at Don Julio’s distillery, La Primavera. Finally, the liquor is aged for 18 months in reclaimed American white oak barrels, the flavor of which helps contribute to the tequila’s smoothness. Contention Over The Patrn Bottle
After explaining his part in introducing Martin Crowley to Siete Leguas, Francisco said, The bottle, that is another story.
When Francisco mentioned the origins of the Patrón bottle it sparked my interest as Francisco Gonzalez Garcia, one of the two sons of Don Julio Gonzales of the Don Julio tequila brand, once told me that Martin Crowley had copied a bottle originally used by Don Julio tequila. I know Don Julio changed its bottle design and Ive heard that this was due to a dispute with Patrón. So, I put this to Francisco who replied, Don Julios son pretends that that is his bottle, that is not true.
He continued, Martin Crowley was looking in the factory, in the offices, and he found an old bottle, full of dust. He started cleaning the bottle and said, I like this, are you using this bottle? Lucrecia replied, No. It was a tall square glass bottle. That was the original.
Francisco explained that the subsequent argument over the rights to this bottle design led the parties involved to appear before the authorities at the Mexican Institute of Industry in Mexico City where the director in charge of patents and trademarks, Jorge Amigo, judged that that Patrón had the right to use the bottle in the United States and the rest of the world, including Mexico, but Don Julio could use that bottle or elements of that bottle design in Mexico. In case of doubt, Francisco finished this explanation with, That is what happened. That is the truth.
