You may have heard the rumor that the spirit known as mezcal is simply a smoky version of tequila. In fact, the truth is closer to the reverse of that: the term “mezcal” refers broadly to any distillate of the agave plant produced in Mexico, so the spirit called tequila is simply one specific type of mezcal. While government regulations allow for the production of mezcal in nine different Mexican states, tequila may only be produced in five states: Jalisco, Michoacán, Nayarit, Guanajuato, and certain parts of Tamaulipas. Addionally, while mezcal may be produced from dozens of different agave varietiesresulting in numerous distinct styles and flavor profilestequila may only be produced from the blue Weber agave.

And Mexico’s Clase Azul tequila brand is capitalizing on the craze.
Clase Azul — which sells bottles ranging from $100 to $30,000 each — has been served at some highly exclusive affairs, including movie premieres, the Screen Actors Guild Awards and celebrity parties.
The label has come a long way since it launched in 1997. Mexican founder Arturo Lomeli admits his first tequila was low-cost, “terrible” and packaged with a tacky sombrero and mustache.
Lomeli decided to go back to school to get a master’s degree in luxury marketing to elevate his brand. He quickly learned about the value of crafting a higher quality product in unique packaging
Clase Azul tequilas are now sold in hand-sculpted, hand-painted ceramic decanters that are shaped like massive restaurant-style pepper grinders.
“We started thinking in terms of exclusivity, in terms of giving the best that we can to those who can really appreciate it,” he said.
Lomeli said he first became known as a high-end tequila craftsman in 2007 when he launched a $1,200 bottle of dark amber Clase Azul Ultra. It was simply intended to cause a stir on the tequila scene, rather than become an enduring product.
“We didn’t imagine that we were going to be in the business of selling super expensive bottles regularly,” he said.
Lomeli considers himself lucky that he launched his luxury spirits as Americans were getting a taste for premium tequila.
Instead, Clase Azul concentrates on export markets in the U.S. and Europe.

Clase Azul Tequila Is Made With Passion And Craftsmanship
In the first step of tequila production, organic agave plants from Jalisco, Mexico are grown to maturity for at least nine years before they are harvested. Then the agave is slow cooked for 72 hours in traditional brick ovens to release its sweet juices. The next stage is fermentation which is done using a proprietary yeast strain which enhances the tequila flavours.
Once the fermentation and resting of the tequila is complete, the Clase Azul is bottled. The tequila is bottled by hand, into beautiful artisanal bottles which are hand sculpted and individually painted, so no two bottles are exactly alike. The materials used are of the highest quality, including the ceramics, the non-toxic paint, and the hand-made brushes. Each bottle takes a mammoth two weeks to complete, so you can see that the process is undertaken with painstaking care. Finally, the bottles are capped with a beautiful pewter stopper to complete the look.

Nearly all premium tequilas are made entirely from blue Weber agave , but there’s another category of tequila called “mixto” in which blue Weber agave need only compose 51 percent of the spirit. Producers utilize various types of sugar to make up the remaining percentage, including high fructose corn syrup and molassesalthough sometimes a lightly processed Mexican cane sugar known as piloncillo is what’s used. If your bottle doesn’t indicate on the label that it’s made from 100 percent agaveand if the price is on the lower end of the spectrumthere’s a good chance that you’re dealing with a mixto. A NOM is a number used to indicate the distillery in which the tequila is made. To produce this special bottle of ArteNOM, distiller Jake Lustig teamed up with the Camarenas, the family that owns and operates NOM 1579, Jaliscos Destileria el Pandillo. Brick-oven, steam-roasted agave is crushed by a special tahona called Frankenstein, jerry-rigged out of scavenged parts: a junkyard cylinder and an old train wheel axle. After copper pot distilling with a mix of rain and well water, its left to oxidize overnighta key process as oxygen accentuates the blancos fruity nature. Cherry and papaya notes mingle with mint and pepper in a spirit with a big, silky mouthfeel.
