This unique release from Penelope is light in the sense of aging, not like a light beer. This is all about the barrel having no char which is classified as light whiskey. Anyway, this expression is a blend of MGP whiskeys thats left at a very high proof before bottling as-is.

Tasting Notes:

This is a wild card with familiar notes of pancake batter with plenty of vanilla, caramel corn balls, sweet apple tarts, and a mild dose of very soft yet resinous pine. The palate moves from creamy vanilla pie toward apple crumble with plenty of butter and brown sugar, cinnamon, and tartness before a layer of soft floral citrus arrives. The finish feels like vanilla cupcakes frosted with an eggnog frosting with plenty of powdered sugar everywhere next to a woody yet subtle spice mix.

Bottom Line:

This feels like a style thats going to catch on as distillers and blenders look to expand their shelf space, and this is a great example of why itll catch on.

Why Does Whiskey Burn The Science

Your mouth and throat are lined with a delicate mucous membrane. Part of that lining includes nerve cells called vanilloid receptor-1 or VR1 receptors which react to the temperature of food and drink, and alert you when something is too hot and can hurt you. The VR1 receptors do this by sending an electrical signal up the nerve fibre to the brain which registers the sensation as pain. You now feel the pain and if youre sensible, stop what youre doing.

Normally these nerve cells react to temperatures above 108°F / 42°C but they can be triggered at lower temperatures too. There are two ways this can occur. The VR1 receptors can be made to think something is activation level temperature when it isnt, or their sensitivity can be increased causing them to be activated at a lower temperature.

An example of the first happens when you eat chili peppers. The active ingredient capsaicin tells the VR1 receptors that the pepper is 108°F / 42°C when it isnt. You never knew a chemical compound could lie so well.

On the other hand, when you drink alcohol the sensitivity of the VR1 receptors is increased causing them to be activated at a lower temperature.

The higher the alcohol content the more it burns. This is because the higher the level of alcohol the more it dries out the mucous membrane. The drier the mucus membrane the more sensitive the VR1 receptors become and the louder they send the message.

Grain whisky normally has a lighter body, and that lightness usually pushes it to blends, rather than to being used in its own right.

    Here though, a grain whisky is the star. A grist of 50% barley and 50% wheat, matured in bourbon barrels and finished in oloroso sherry hogshead casks, this has an unexpected fullness, with a rich fruity nose. Vanilla and candy floss mingle with a clean, almost menthol quality. Very smooth, with an edge of the alcohol presenting itself at 46%, plus titbits of ginger biscuits and hazelnut poking through.
