The Way A Rum Is Aged Will Change Its Color
Rum comes in so many different forms, but this is what it all boils down to : Rum varies by both where it is produced and how much time the alcohol spends in a barrel. Interestingly both light and dark rums start out as a clear liquid.
To make rum, either sugar cane juice or molasses is mixed with water and yeast to ferment. The fermented result is referred to as a “wash” and is distilled. The mixture of alcohol and water is boiled, which gives off vapors. Once those vapors are cooled, they’ll be condensed and ultimately distilled. Once distilled, the clear rum may be aged in a stainless-steel tank, where it won’t take on any color characteristics at all. Clear rums may also make their way into a barrel, typically aged for one year to take on some of the barrel’s characteristics and create a smoother spirit. Once aged, the liquid is removed from the barrel, and the color is filtered out.
Golden or darker rums, on the other hand, spend more time in the barrel, taking on the characteristics of the wood along with gaining a smooth texture. Aging in oak barrels produces a golden rum whereas a charred oak barrel will make for a dark rum.

How Rum Is Blended
After it has been sufficiently aged, rum will almost always be blended to some degree before it is hydrated to the desired ABV and bottled. Producers will combine rum of different ages, distillation processes, batches, and even casks to produce the desired character and flavour.
As mentioned earlier, some producers simultaneously use column and pot distillation. It is only at this stage that the rums are blended together. Some producers limit blending and may offer single-cask expressions. Meanwhile, others use rum that has been aged in different casks for the same period of time.
However, the blending process can be particularly elaborate, especially given that there are no definitive regulations that dictate standards.
Indeed, blending rum is a somewhat precarious issue. For instance, unlike cognac, there are no limits on the amount of sugar or boise, a boiled wood syrup, that can be added to a blend.

Pot Still Rum Production
Pot stills are the simplest and the original type of still. Extensively they are glorified copper kettles – indeed in some countries such as the Netherlands even call them ‘kettles’ rather than stills. These are the kind of stills used in Scotland to make malt whisky and France to make cognac.
The still is charged with the wash and then heat is applied to bring to the boil. The volatile ‘high wines’ or ‘heads’ will be given off first and set aside. These are undesirable compounds, partly due to being tainted as these first vapours effectively clean the still from the previous distillation.

Overthrow Of Governor Bligh
On the morning of 26 January 1808, Bligh again ordered that Macarthur be arrested and also ordered the return of court papers, which were now in the hands of officers of the New South Wales Corps. The Corps responded with a request for a new Judge Advocate and the release of Macarthur on bail. Bligh summoned the officers to Government House to answer charges made by Atkins, and he informed Johnston that he considered the action of the officers of the Corps to be treasonable.
Johnston, instead, visited the jail and issued an order releasing Macarthur, who then drafted a petition calling for Johnston to arrest Bligh and take charge of the colony. This petition was signed by the officers of the Corps and other prominent citizens but, according to Evatt, most signatures had probably been added only after Bligh was safely under house arrest. There are much better coconut rums out there. First thing its like 42 proof so its almost all water and sugar so I cant consider it a true rum, more like a liqueur. With that in mind you cant expect much as far as quality. Opening it you get a sugary coconut smell with no hints of alcohol. Drinking it is much the same you get a very distinct extract of coconut taste with a side of a large portion of sugar cane and thats about it. I prefer other coconut rums that dont use coconut extract because its just not anywhere near comparable to a natural coconut flavor. Which is why this rum loses points because it is beat out by a large amount of competitors.
