Tropical flavors like coconut, pineapple, and rum will have you dreaming of Caribbean vacations and summers nights when you make my easy version of pineapple rum punch! And you can add a little grenadine to the glass for a fun, layered sunset effect.
Im getting into the summertime spirit today! Yes, there is still snow on ground around here and yes its still March, but the snow is melting, the sun is warm, and the days are getting longer. I can just about taste summer right now.
Especially when I have a glass of pineapple rum punch in my hand! What can I say? It helps.
A few months back I bought some coconut liqueur when I was at the store. I dont remember why I bought it, except that it seemed interesting and I wanted to try it. I think thats enough of a reason, right? Right!
And then one evening sometime before Christmas I was thinking about our upcoming vacation to Bonaire and in the mood for a tropical cocktail. So I thought Hey, I have coconut liqueur! And pineapple juice! And rum! Score! and made myself a drink. Which, as you can see, was a total score since Im posting that drink right now.

What Flavors Did We Use
Of course a true Tiki drink like the Coconut Rum Painkiller needs another tropical flavor to support it. We wanted to stay true to the original Painkiller cocktail recipe we turned to fresh pineapple juice. Pineapple juice gives this cocktail a nice tangy flavor while adding a bit of sweetness and a bit of golden color to the drink.

Clearing out clothes, decorations, home decor, and the kitchen. Do you spring clean your entire house too or just your clothes?
As a baker, I definitely have a huge supply of ingredients in the kitchen but I do a cleanout seasonally so I can focus on the freshest ingredients for all of you and of course my taste testers. Im making way for all the vibrant and fresh flavors of the spring and summer seasons.

If you live near a high-end market, international market, or maybe a farmers market you can try to search for pineapple oranges. I had never heard of them before but they have a sweeter flavor but dont have an overwhelming pineapple flavor. They are actually the oldest variation of oranges in Florida . How To Mix Rum And Orange Juice
Before we start, note that this method works for most cocktails. So you can substitute alcohol in this recipe using vodka or whiskey.
Like many other cocktails, the best way to mix this drink is with a shaker.
Place ice into a shaker, pour the liquids in, close the lid and start shaking for about a minute. Strain the cocktail into a tall glass topped with ice and slowly pour the soda in for the ombre effect.
Its important that you strain away the ice in the shaker. Theyre not as cold as fresh ice and will water down your cocktail quickly.
If you do not have a shaker, place all ingredients into a glass and stir it well. Top it with ice and add soda.
Heres a summary:
Stir sugar with orange juice
Mix in rum and pineapple juice
Pour into serving glasses and slowly add soda
Garnish and enjoy
Always pour the soda in last and never stir it vigorously. Doing so can flatten your cocktail, and it would defeat the point of adding soda.
See how we stick to this rule in our orange juice mocktail.

Its pretty easy to mix up any kind of drink when you have vodka or rum and pineapple juice on hand!

Making This Drink For Parties
The recipe for this drink is for one cocktail.
Which is great if youre only looking for one drink or having only a few guests over.
However, what if you wanted to make this drink for a party?
Well, the joy of this drink is that it can easily be multiplied to make whatever amount you might need.
In fact, this drink is perfect for a boozy punch bowl.
Just remember a few things when youre multiplying this recipe:
- 1 cup is equal to 8 ounces.
- Ice shouldnt be added until you serve as it can water down the punch. To keep punch cold you can try ice in bags, dry ice, or even frozen pineapple or orange juice so while it melts it will just add more fruit flavor.
- The grenadine might sink to the bottom of the punch bowl so you can also opt to add this to each individual drink if it bothers you. Just stir it up to recombine.

Cheers! Garnish your glass, serve immediately, and enjoy!

Dont Have/cant Find Coconut Liqueur
Coconut rum is fine substitute. I have used a mix of unflavored rum and coconut rum with good results.
Also, you can move a bit in the pina colada direction and switch to cream of coconut. I made jugs of rum punch down in Bonaire using cream of coconut since thats what I had and everyone loved the drinks.
The important parts of the drink are that you balance the sweet and the tart, have a noticeable coconut flavor, and add enough rum to give it a good kick. Oh, and have fun too! That should be the first thing.

Sure, we all love our Mai Tais, not to mention the mini Frozen Daiquiris BlackTail serves as a welcome drink. But, Vida says, theres a vast world to rum that people should explore. Its a mistake to think rum is only good for Mojitos or Frozen Daiquiris, says Vida. Rum has so much more to offer. Dont be afraid to get outside of the box a little bit.
