You will need to use defrosted or fresh white fish filets for this. Things like frozen cod in air fryer wouldnt work as the middle wouldnt have enough time to cook thru. As far as the type of white fish you should use, there are several that would be just fine.

Typically I will just choose whichever is on sale and make it with something like pollack, cod, air fryer tilapia, halibut. you get the idea. I suppose you could use salmon but breaded isnt my preference for that variety. I think that is better just lightly seasoned.

  • To a mixing bowl, add flour, baking powder, paprika, old bay, garlic powder, onion powder, and salt. Whisk to combine ingredients. Next, add cold beer and mix smooth. Do not over-mix, small lumps in batter is okay. Cover and refrigerate for 15 minutes.
  • Meanwhile, prepare a baking rack on top of a rimmed baking sheet. Add oil to a dutch oven or heavy-bottomed pot until it measures 1½ inches deep. Heat until oil reaches 375°F or when oil appears shimmery.
  • Pat cod dry then season both sides with salt and pepper. Dip cod fillets into batter, one at a time, then use a fork to remove from batter, allowing excess batter to drip back into the bowl.
  • Add cod to oil, a few pieces at a time. Careful to not overcrowd the dutch oven. Maintain a temperature of 350°-375°F.
  • After 4-5 minutes or when batter is golden brown, use a spider strainer to remove pieces from oil and place on wire rack.

    Make sure the oil reaches the correct temperature before adding the fish too hot and the batter will brown but the fish wont be cooked through, not hot enough and the batter will soak up too much oil and be greasy and soggy. Don’t forget to make sure you dispose of the cooking oil correctly after trying this recipe at home!

    If you want to give this recipe a twist, opt for beer-battered salmon instead, or you could even use this simple batter to whip up a batch of onion rings.

    The word itself comes from the French battre simply meaning to beat. The luckiest of us dont have to beat the batter vigorously to get it together anymore, since some clever engineers invented the electric whisk, but beer batter doesnt really require a great effort, anyway.

    We can simply use our favorite fork, reserved for cooking and get on with the whisking just fine.

    Although it may sound wild to suggest that beer battered fish is a recent invention as people has been brewing and drinking beer since at least the 6th millennium BC, there are no records on any carving or on papyrus scroll about people dipping their fish in beer batter.

    What we know about battered fish is that immigrant Spanish and Portuguese Jews, fleeing religious persecution, brought the way of preparing fish with them to England around the 17th century.

    Fish, fried for Friday Shabbat dinner, was allowed to eat on the following day. Coincidentally, Christians also liked to eat fish or Fridays, mainly because lent was held and no other animal flesh or eggs were allowed.

    Fried fish quickly become popular, especially among the not so well to do population which we can still read about in Charles Dickens Oliver Twist.

    One: Battering The Fish

    The first thing you want to do is lightly season your haddock with salt. Then when we are going to drop the white fish fillet into all-purpose flour. Make sure all parts of the fish are covered in flour. This is a crucial step because it ensures that the wet batter will stick to the fish properly. If you skip this step, the wet batter will slip right off during frying.

    The second thing you need to do is dip the fish into the wet batter. Make sure it is totally coated. Before dropping into the oil, allow the excess batter to run out of the fish.

    What Is Fish And Chip Shop Batter Made Of

    The success of this dish all rests on the batter. Every chippy has it’s own ‘secret’ recipe, so what I have done is tried to work out what makes a good, tasty, light and crispy batter, and this is what I’ve come up with.

    The classic recipe for batter is simply made up of flour, salt, water and salt, and pepper. For this recipe, I’ve used beer instead of water. This gives the fish extra flavor, and the fizz in the beer makes the batter light, crispy and golden.

    If you do not want to use beer, you can use soda or carbonated water in the same quantities to achieve a light crispy batter.

    How Do You Use A Batter Coating In An Air Fryer

    You want to go quickly once you start coating it. Make sure your machine is well preheated and ready to go. Once it is hot lay down your parchment paper, dip to coat both sides and add with a bit of space in between each piece. Just like tempura batter, always allow excess batter to drip off before putting inside your basket.

    • Mix 1/2 cup of your flour thoroughly with salt, black pepper and spices of your liking in one dish.
    • Pour the second half of the flour into another bowl, stir with the baking powder and add the egg. Pour beer into this bowl and whisk into a thick batter.
    • Preheat the air fryer to 380 F. for 5 min.
  • It should be thick enough not to drip off a spoon, but to drip slowly. Dry each fillet with napkins and roll in the seasoned flour on all sides.
  • Transfer piece into dish with thick batter and coat the fish on both sides.
  • Lift up so excess can drip off.
  • Coat the flour lightly with the remaining flour in the other bowl. Just a tad to avoid the batter sticking to the parchment.
  • Line an air fryer basket with parchment and non stick cooking spray. Place the battered fish inside.
  • Spray the top of the battered fish with olive oil. If this is not done, the flour will remain dry on the surface of the batter.
  • Bake for 12 minutes.
  • Flip to the other side, spray with olive oil again on tops and bake for another 2-3 minutes.
  • Allow to cool a bit if your kids are going to want to pick them up like finger foods and dip into tartar sauce.

    There are very few recipes that conjure up more memories from the East Coast than the beer-battered fish. As one of the greatest comfort foods, its a crunchy, crispy, and oh so crave-able treat that is about as perfect of a meal as you can get!

    For me, one of my greatest pleasures is sharing a plate of fish and chips with someone you love after a beautiful maritime beach day.     Making beer battered fish requires only a handful of ingredients-most of which are seasonings-and is a lot easier to whip up than you think.

    Now lets talk about the crispy batter for the fish. The secret to getting light and crispy fried fish is the addition of baking powder.

    After adding and mixing the batter ingredients, tiny gas cells form which later expands and rise once added to the hot oil, creating a lighter and airy texture. The result is a light and airy texture that with the perfect amount of crunch.

    Now for the sauce. This dill-and-caper-forward tartar sauce is a guaranteed crowd-pleaser. Its creamy, full of texture, herbaceous, and briny all at the same time and I absolutely love it! Try your hand at this tartar sauce recipe and youll never go for the store-bought bottle again.

    I wouldnt this coating for vegetables, rather Panko is better for those like our zucchini fries in air fryer. Both are a great duo as I always like to serve a veggie with our dinner. Making it with a yummy crisp coating always entices kids to love them more than just plain for sure.

    If all you have is frozen fish youll want to thaw ahead of time. Fastest way to defrost fish is to put into a freezer bag, zip closed, and submerge into a bowl of cool water. Replace water every 30 minutes or so until it is no longer hard.

    What Fish And Chip Shops Use

    Choice of fish varies between countries and regions, depending on whats available. Most common:

    • Australia Basa, hoki, flake and hake are seen at everyday suburban fish n chip shops because they are economical options with good flavour and flesh characteristics. Better places will also offer more expensive options such as snapper, barramundi, cod, whiting and flathead

    • US Cod, halibut, tilapia, haddock. In the Southeast, catfish is used frequently and

    • UK Cod and haddock are firm favourites, but other varieties offered include hake, pollock, whiting and plaice.

    How To Avoid Too Much Grease On Your Fish

    Fried foods are pretty tasty, but the one real disadvantage they have over any other foods is how greasy they are. While that greasiness is what gives it so much intense, crispy taste, its still really annoying.

    To help you end up with less grease on your fried dish, make sure that you are using a slotted spoon or some durable tongs to pick up and move your fish when in the oil.

    Alongside that, once the fish is done, make sure that you transfer it to a plate lined with paper towels. The paper towels will absorb the excess oil, leaving you with a still crispy piece of fish, only it wont be literally dripping with gross, insanely hot oil anymore.

    Things To Keep In Mind For Fried Fish

    You will likely have excess batter: This is not a recipe error, you want to make sure you have enough to dredge all the fish. Just toss the excess. Or try tempura veggies!

    Pick your favorite fish: White fish fillet is best, cod is what is typically used for fish and chips. I like halibut personally.

    Use the cornstarch: If you only use all-purpose flour it will not stay as crispy. You want to make sure to add rice flour or corn starch to the mixture.

    Can you taste the beer? When you use a light colored beer you will not really taste it in the batter. But if you use a stout or dark ale you will.

    Non alcoholic sub for beer: If you really do not want to use beer, you can substitute it with soda water and baking powder to get similar results. Use the equivalent amount of soda water and ¼ tsp baking powder.

    Batter thickness: Add more or less beer to get the batter consistency right. You want a slightly thinner batter to get a crispier end result. Think heavy cream. Do not over mix the batter, as this will activate the gluten in your flour, and make your batter thicker and chewier instead of light and crispy.

    • Lemon wedges A squeeze of lemon is always welcome and many people are happy with just this

    • Tartare sauce I like to make mine extra lemony when using it for fried foods

    • Any seafood dipping sauce Find all my favourites here

    • Yogurt mixed with lemon For a lighter option, though somewhat ironic when making fried fish!

    • Ketchup or Aussie tomato sauce

    • Malt vinegar and a sprinkle of salt The British way!

    Though frankly, if youve got really good fish and you season every layer lightly, then youll munch it plain and wont even think about a dipping sauce!

    How To Make Beer Batter Fish Fry

    Ill be honest, I am NOT a drinker, so while I dont ever have beer in my fridge, that wont stop me from buying it specifically for this recipe. The beer gives the batter that light airy texture, creating a thin, yet crispy coating thats totally crave-able.

    Heres what youll need for the beer batter:

    • All Purpose Flour
    • Garlic Powder adds great flavor to the batter
    • Paprika gives the batter a nice flavor, while also helping give a nice golden brown color
    • Seasoned Salt feel free to adjust salt levels to taste
    • Egg helps to create a nice texture and bind things together
    • Beer the type of beer doesnt really matter, I like to use a dark amber beer like Dos Equis

    *Theres no need to be concerned with alcohol consumption and this recipe, as the alcohol will get cooked off when the fish is fried in oil.

    How To Get Crispy Fried Fish Every Time

    There are a few things to watch out for in order to get perfectly crisp and flaky fried fish. Dont worry, its actually super easy and results in success every time!

    • Dry and Season Pat down the fish with paper towels and then season each piece of fish with salt and pepper prior to being dipped in the batter.
    • Oil Temperature If your oil is not hot enough, you could end up with an oversaturated coating that is soggy and unappetizing. If your oil is too hot, youll end up burning the outside of the fish coating, not giving the fish inside enough time to get cooked and flaky.
    • If your fryer doesnt keep track of the temperature for you, invest in a cooking thermometer to keep your oil at a constant temperature of 375 degrees F.
  • Dont Over Crowd Placing too many pieces of fish into the fryer at a time will quickly drop the temperature of your oil, which is no good. Start with just a few pieces of fish at a time, giving them ample time to fry and get nice and crispy.
  • Use a Cooling Rack You worked hard to get that crispy fish coating, dont lose it by setting the fish on paper towels or newspapers to drain. This action will cause steam to form between the fish and the coating, making your fried fish quickly lose that crisp coating. Use a cooling rack to keep that coating nice and crisp!
  • Can you just hear that crunchy coating? Oh man, this fried fish is seriously so delicious!

    Can You Air Fry Instead Of Fry This Beer Battered Fish

    This is a try one. Battered foods are hard to air fry because by nature the batter is wet, runny, and will run off the food in the air fryer and through the little holes in the bottom.

    So the rule of thumb is no, you wont get the same results.

    However, you CAN air fry this fish, you will just have a thicker batter and coating, so it wont be exactly the same, or as good, but it will be healthier.

    Here is how you do that:

    Make fish as directed. But after battering the fish, dredge it in a mixture of 3 parts flour to 1 part cornstarch. By dredging it in flour again, you create a coating that will stay put when you air-fry

    Use slightly thicker fillets for air frying, as you want to make sure you do not overcook it while getting that golden brown exterior.

    Once you have coated your fillets with the batter, then the flour mixture, you will need to spritz the coated fish generously with oil so there isnt dry flour. It may feel like a lot, but it is still less than frying.

    Then, air fry for 12 minutes at 400 degrees F. Or until exterior is golden brown.
