This might be common knowledge for some, but it’s worth a refresher before you go out and buy a bottle. Let’s start with a burning question we answered back in 2008: what makes a whiskey bourbon?
The law. While knocking back a dram of bourbon is a decidedly carefree exercise, making it is exceedingly technical and requires that the whiskey meet a rigid set of criteria. The Federal Standards of Identity for Bourbon stipulate what is and what isnât bourbon. For a whiskey to call itself bourbon, its mash, the mixture of grains from which the product is distilled, must contain at least 51% corn. The mash must be distilled at 160 proof or less, put into the barrel at 125 proof or less, and it must not contain any additives. The distillate must be aged in a new charred oak barrel. If you distill a whiskey in your kitchen that meets all of these standards, congrats, youâve made bourbon. Also, youâve broken the law the ATF is probably outside your house right now.

Whiskey Vs Bourbon Mash Bill Requirements
To produce any type of whiskey, the whiskey maker must first create a grain mash the distillers equivalent to beer brewing. The mash is created by grinding cereal grains and adding them to water, cooking the mixture to convert the starches to sugars a process called saccharification then cooling the liquid and pitching yeast and allowing the brew to ferment to create a terminal beer of about six percent ABV .
The mixture of grains used in this process and their overall proportions is called the mash bill.
Distillers of bourbon and other types of American whiskey may use lab-produced enzymes to create their mash. While malted barley is traditionally used in nearly all large bourbon brands, craft producers have begun to utilize synthetic diastase to induce saccharification during the cooking phase. Therefore, they can skip malted barley, which is used in nearly all types of traditional whiskey-making for its enzymatic properties.
A distiller of another type of whiskey from some other countries for example, Scotland would be barred from using these lab-produced enzymes, making them beholden to the traditional use of malted barley or other malted grains to produce beer with high enough alcohol content to allow distillation. But American distillers may choose to skip this step.
The type of grains used by distillers either by tradition or legal mandate goes a long way in determining the flavor profile of the finished whiskey.

How Do Bourbon And Rye Differ
Bourbon can only be made in the United States, whereas rye whiskey can, and does, come from all over: Canada, the Netherlands, Germany, the U.K., and even Australia.
Nothing, other than water, can be added to bourbon, whether or not it is labeled straight. For rye whiskey, the rules are a little different. Straight rye cannot have any additives, but if the rye isnt labeled as straight, or if its a blend of straight ryes, up to 2.5% of the volume can be harmless coloring/flavoring/blending materials. Since these additives do not have to be disclosed, its impossible to tell which ryes might include them, although Templeton Rye is a well-known example.
Flavor-wise, bourbon tends to be sweeter and has a more oily mouthfeel than rye due to its high corn content. Common flavor notes in bourbon include vanilla, caramel, nuts, oak, dark fruit, chocolate, and mild spice.
Rye whiskeys flavor profile can vary considerably depending on its overall rye content. A minimum-51% rye, like those traditionally made by the big Kentucky distilleries, will taste quite similar to bourbon. But 100% ryea style that often comes from Canadatypically has rich spice and herbal notes, enhanced by flavors derived from barrel aging such as vanilla and oak.

The Old Fashioned is the original cocktail, some say. Its earliest iterations were known as the Whiskey Cocktail and the cocktail was recorded first in 1862 in Jerry Thomas Bartenders Guide. It consisted of whiskey, sugar , bitters, and ice.
The Manhattan came about later in the mid-1870s as vermouth was gaining popularity in the states. Bartenders always want to try something new. In this case, the new hot thing was vermouth, and the earliest Manhattans were an even ratio between whiskey and vermouth.
