Most people are pretty familiar with the Long Island iced tea, but in case you arent or in case you are but dont know how to make it heres one of my favorite recipes for it.

It combines Captain Morgan Silver Spiced with vodka, triple sec, sweet and sour mix, Coca-Cola, Tanqueray London Dry, tequila, and a lemon wedge.

Its not the standard Long Island Iced Tea recipe that everyone uses, but if youre looking for something insanely strong and pretty tasty, give it a try anyway.

A lot of great rum comes from Barbados, and Mount Gay is a stellar example of this. Master blender Trudiann Branker recently made some significant changes to the Black Barrel expression: its aged for three to seven years, has a bit more pot still distillate in the blend, and the finish in heavily charred ex-bourbon barrels increased from one to six months, resulting in an even more flavorful rum.

“Finished in bourbon barrels with a heavy char, as opposed to the typical practice of finishing in a used cask,” says Shannon Mustipher, bartender and author of Tiki: Modern Tropical Cocktails, “It has more pepper and spice than the other rums from Mount Gay.

It is distilled from cane juice, but distilled five times so that grassy note is not present this allows some of the spice notes to shine.

Diplomatico Reserva Exclusiva is a stand-out rum to drink neat or on the rocks, according to McCoy. This is a blend of rums up to 12 years old with super smooth orange tobacco wood notes from a great Venezuelan distillery.

The rum is slightly sweet, as Venezuelan law allows for the addition of sugar, but there are some really bright, rich fruit notes throughout, along with a good balance of vanilla and banana flavors. So, instead of using a cheaper white rum, splurge on this bottle to make Piña Coladas.

How Is Rum Made

Rum is made using one of three methods:

Directly fermenting sugar cane juice

Creating a concentrated syrup from sugar cane juice and then fermenting

Processing the juice into molasses followed by fermenting

The most important step is properly harvesting the sugar with the cane cut close to the ground. Then while the sugar content is high it must be milled quickly, boiled, rendered down, and the juice squeezed out.

Distillation typically happens in pot stills. Depending on the type of rum it may go through the distillation process twice, raising the alcohol content. Ageing can be from a few weeks up to thirty years!

History Of Captain Morgan Rum

In the beginning of the 20th century, Canadian Samuel Bronfman was one of the most successful alcohol tycoons. He traveled the world and bought all the interesting brands of alcohol to create an assortment in his own company. And in 1924, together with his brother, he moved to Canada one of the distilleries that closed in America and began its own production.

After 4 years of excellent work, the brothers bought the successful Canadian company Joseph E. Seagram & Sons. And the company got the name Seagram.

To find the best flavor combinations, Bronfman went to Jamaica, where in 1944 he bought Long Pond, an old distillery. There he tasted the tart and spicy rum infused with herbs and botanicals by regular customers of the Levy distillery. The work of marketers was successful, because they came up with the story that the new rum was made according to the old recipe of the famous pirate Captain Morgan.

After that, the alcohol is often aged in American whiskey barrels. Why? When making bourbon, the law goes that you can only use new oak barrels to age the alcohol. These oak barrels are then passed down to rum companies, where they live a happy life aging the good stuff.

A good rum has a broad spectrum of flavors, from caramel and vanilla to smoke and earth. How do rum makers achieve this complexity? Fire, people, FIRE! Machines that are essentially giant flame-throwers char the insides of the oak barrels, imparting a toasty flavor on the rum aged inside.
